Granola – A Great Gift

There’s a time for healthy recipes, and there’s a time for recipes that are a little more sweet and special.  This is one of those, and let me tell you – it’s a good one!  I made this granola for some friend gifts this year, to go with some handmade mugs and bowls.  So without further ado…a granola recipe for you!

3 cups oats

1/2 teaspoon salt

1/3 cup brown sugar

1/3 cup maple syrup

4+ teaspoons vanilla (or a bit more!)

scant 1/2 cup oil (you could probably use coconut if you wanted – I bet that would be good!)

nuts of your choice – I added a few handfuls of walnuts and the leftover sunflower seeds from the bottom of a trail mix bag

Mix ingredients (nuts included) together.  Grease a baking pan (one with sides).  Pour granola mixture in and press down (this is so that you get clumps).  Bake for 30-40 minutes at 325.  Once finished cooking, let sit about 5 minutes and then break up granola into clumps.  Stir in dried fruit if you want – dried cranberries, raisins, apples – whatever you like. Enjoy!

      We were always (and still are) about the homemade gifts – food, ceramics, decorated matchbox covers with felt, homemade “Peanuts” version of monopoly, pictures – it’s definitely a lot of fun!
